This coffee-soaked chocolate sheet cake with raspberry jam and chocolate glaze is a moist cake with ingredients measured by the cup. Simply mix eggs, sugar, semi-coarse wheat flour, Granko (instant cocoa drink mix), oil, and baking powder, then bake for 35 to 40 minutes at 180 °C (350 °F). While the cake is still warm, drizzle it with sweetened coffee, spread it with raspberry jam, and top it with a glaze made by melting chocolate in cream.

Let the cake rest in a cool place for 8 to 10 hours before slicing, so bake it a day ahead.

Instructions

Tip: tap a step to mark it as done.

  1. Place the beaten eggs, granulated sugar, semi-coarse wheat flour, Granko, oil, and baking powder in a bowl. Mix together, pour into a greased and floured sheet pan, and bake in an oven preheated to 180 °C (350 °F) for 35 to 45 minutes.
  2. While the baked cake is still warm, drizzle it with warm sweetened coffee. Let the coffee soak in briefly, then spread the cake with raspberry jam.
  3. Melt the chocolate in the heavy whipping cream, bring the mixture to a brief boil, and spread the glaze over the cake. Let the cake rest in a cool place for 8 to 10 hours.
  4. Cut the cake into smaller pieces and garnish with whipped cream, for example.

Tip: Use the cup to measure the flour, sugar, and Granko first, and measure the oil last. Otherwise, the dry ingredients will stick to the oily sides of the cup, leaving less to go into the batter.
