Podpecníky, Slovak yeast flatbreads topped with sour cream and bacon, are a traditional Slovak dish still made today. The yeast dough, made with semi-coarse wheat flour, eggs, butter, and milk, rises for an hour before being spread on a greased baking sheet, topped with sour cream, and sprinkled with pieces of smoked bacon and black pepper. It bakes for about 45 minutes at 190 °C (375 °F), until the dough is golden and the bacon is browned. Serve as a hearty dinner or when entertaining.

Instructions

Tip: tap a step to mark it as done.

  1. Preheat the oven to 190 °C (375 °F). Combine the milk, sugar, and yeast in a bowl, stir, and let the mixture rest at room temperature.

  2. Meanwhile, combine the flour, eggs, butter, and salt in a larger bowl. Add the yeast mixture and knead into a dough. Cover with a kitchen towel and let rise in a warm place for about an hour.

  3. Cut the bacon into small pieces. Spread the risen dough on a baking sheet greased with lard, spread with sour cream, and sprinkle with the bacon and black pepper. Bake for about 45 minutes, until the dough is golden brown.

Tip: Make dimples with your fingers in the risen dough on the baking sheet so the sour cream settles into them instead of running toward the edges during baking. The milk for the yeast mixture only needs to be lukewarm.
