Split pea soup with frankfurters is a simpler variation on split pea soup with smoked meat: simmer yellow split peas with potatoes and carrots until thick, then add slices of browned frankfurters. Garlic and marjoram give it its characteristic flavor.

Instructions
Tip: tap a step to mark it as done.
Cook the split peas
45 minRinse the split peas, add 1.8 l water and the bay leaf, and simmer for 40–45 minutes, until the peas begin to break down. Skim off any foam with a spoon.
Add the vegetables
20 minPeel and dice the potatoes and carrot, then add them to the pot. Add the salt and simmer for another 20 minutes, until the vegetables are tender and the peas have broken down.
Brown the frankfurters
10 minFinely chop the onion and sauté it in the oil. Slice the frankfurters into rounds, add them to the onion, and cook briefly until browned. Stir the onion and frankfurters into the soup along with the crushed garlic and marjoram. Season with the black pepper and simmer for 5 minutes. Remove the bay leaf.
Tip: Brown the frankfurters with the onion before adding them to the soup—they will release a little fat and give the soup a richer, lightly smoky flavor.
