Instructions

Tip: tap a step to mark it as done.

  1. Cook the split peas

    1 hr

Rinse the split peas in a strainer until the water runs clear. Add 1 l of water and the bay leaf, and cook for 50–60 minutes, until the peas break down completely. Skim off any foam with a spoon and add more water as needed.

  2. Blend

    5 min

Remove the bay leaf and drain off any remaining water. While the peas are still warm, blend them with the garlic, 3 tbsp of the oil, marjoram, vinegar, salt, and pepper until smooth. Let cool for 30 minutes.

  3. Fry the onion

Meanwhile, slice the onion into thin half-moons and fry in the remaining oil until golden brown.

  4. Serve

Spoon the cooled spread into a bowl, top with the fried onions, and serve with bread.

Tip: The spread thickens as it cools. If it is too thick, stir in a tablespoon of water or oil.
