Split pea patties are a meatless lunch made with inexpensive ingredients: mash cooked split peas with potatoes, egg, garlic, and marjoram, then pan-fry the patties until golden. They taste like split pea purée but have a crisp exterior. Serve them with sour cream or a dill pickle.

Instructions

Tip: tap a step to mark it as done.

  1. Cook the split peas

    50 min

Rinse the split peas, add 800 ml water, and cook for 45–50 minutes, until the peas break down and the water has almost evaporated. Skim off any foam.

  2. Cook the potatoes

    20 min

Meanwhile, boil the potatoes in their skins until tender, then peel and mash them.

  3. Make the mixture

    10 min

Mash the split peas with the potatoes and let cool for 10 minutes. Stir in the egg, pressed garlic, marjoram, flour, salt, and pepper.

  4. Pan-fry the patties

    15 min

Heat the oil, then spoon the mixture into it, shaping patties about 1 cm thick. Pan-fry for 3–4 minutes per side until golden. Serve with sour cream.

Tip: Cook the peas until thick, with no excess water remaining. If the mixture is too loose, add a tablespoon of flour.
