Onion fritters with leek and marjoram are a crispy alternative to traditional potato pancakes. Thinly sliced red and white onions are sautéed with leek in oil for about ten minutes, until softened. They are then mixed with eggs, all-purpose flour, coarse wheat flour, parsley, marjoram, salt, and pepper.
Spoon small fritters into hot oil and fry on both sides until golden brown.

Instructions
Tip: tap a step to mark it as done.
- Peel the onions, trim and clean the leek, and thinly slice both. Heat the oil in a skillet and sauté the onions and leek, stirring occasionally, for about 10 minutes, until softened and reduced in volume.
- In a large bowl, mix the sautéed onions with the chopped parsley, eggs, and both types of flour. Season with salt, pepper, and marjoram.
- Spoon the batter into hot oil to form small fritters and fry on both sides until golden brown.
- Drain the cooked fritters to remove excess oil.
- Serve the fritters with shredded cheese or sour cream seasoned with pressed garlic and a pinch of salt.
Tip: Let the sautéed onions and leek cool slightly before adding the eggs so they do not start to scramble. Rub the marjoram between your palms to release more of its aroma.
