This quick leek and corn salad combines finely chopped leeks, canned corn, and small cubes of apple and hard cheese. It is tossed with mayonnaise mixed with a tablespoon of mustard. Add salt sparingly, since the cheese is salty. You can replace some of the mayonnaise with plain yogurt. Serve chilled as a side dish or with bread.

Dressing
Stir the mustard into the mayonnaise and pour over the salad. Add salt sparingly, since the cheese is salty. Season with black pepper and toss to combine.
Serve
Chill the salad briefly in the refrigerator, then serve.

Tip: Sand can hide between the leek's layers, so wash it after cutting it lengthwise. Dice the apple just before mixing it with the dressing to keep it from browning.
