Make savoy cabbage pancakes just like potato pancakes: mix finely chopped savoy cabbage, eggs, garlic, and marjoram into grated potatoes, then pan-fry until golden. The cabbage gives them a mild flavor and makes them more moist.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the cabbage

    8 min

Remove the tough ribs from the cabbage and chop it finely. Briefly blanch it in boiling water, drain, and squeeze out the water.

  2. Make the batter

    12 min

Peel the potatoes, grate them finely, and squeeze out the water. Mix with the cabbage, eggs, pressed garlic, flour, marjoram, salt, and pepper.

  3. Pan-fry the pancakes

    25 min

Heat the oil in a skillet. Spoon in the batter, spread into thin pancakes, and fry for 3–4 minutes on each side until golden. Drain on paper towels.

  4. Serve

Serve warm with sour cream or a vegetable salad.

Tip: Squeeze as much water as possible out of both the grated potatoes and the cabbage; otherwise, the pancakes will release water in the pan and won't turn crisp.
