Savoy cabbage soup with sausage is a hearty winter soup: the cabbage and potatoes are cooked in broth, then browned sausage, garlic, and marjoram are added at the end. The sausage gives the soup a smoky flavor, so there is no need for meat broth.

Instructions

Tip: tap a step to mark it as done.

  1. Brown the sausage

    5 min

Slice the sausage into rounds and brown it in the oil. Remove the sausage, then sauté the finely chopped onion in the drippings.

  2. Simmer the soup

    25 min

Add the diced potatoes and carrot, caraway seeds, and water. Season with salt and simmer for 10 minutes. Remove the thick ribs from the cabbage and cut the leaves into strips. Add the cabbage and simmer for another 15 minutes, until the vegetables are tender.

  3. Finish and season

    5 min

Return the sausage to the pot, add the crushed garlic and marjoram, season with black pepper, and simmer for another 5 minutes.

Tip: Mash a few potato cubes against the side of the pot at the end to thicken the soup without a roux.
