Baked leeks with ham make a simple oven dinner: briefly parboil the leeks, wrap them in slices of ham, and bake in a cheesy béchamel sauce. The leeks become tender and slightly sweet under the sauce, while the ham adds a salty flavor.

Instructions

Tip: tap a step to mark it as done.

  1. Parboil the leeks

    8 min

Trim and clean the leeks. Cut the white and light green parts into 8 pieces about 12 cm long, then cook in boiling salted water for 6 minutes. Drain.

  2. Make the béchamel

    7 min

Briefly cook the flour in the butter, then gradually pour in the milk and cook, stirring, until thickened. Stir in half the cheese, the salt, and the nutmeg.

  3. Wrap the leeks

    5 min

Preheat the oven to 200 °C (400 °F). Wrap each piece of leek in a slice of ham and arrange in a baking dish.

  4. Bake

    20 min

Pour the sauce over the leeks, sprinkle with the remaining cheese, and bake for 15–20 minutes at 200 °C (400 °F), until golden.

Tip: Drain the leeks thoroughly after parboiling so the water they release does not thin the sauce in the oven.
