Ham and cheese stuffed bell pepper slices are a cold appetizer especially suited to an Easter table. Red and green bell peppers are seeded, filled with a mixture of finely chopped ham, grated soft cheese, butter, garlic, dill, and parsley, then chilled until firm. They are then cut into rounds, with the two pepper colors making an attractive presentation. Preparation takes about half an hour.

Instructions

Tip: tap a step to mark it as done.

  1. Place the cheese in the freezer and finely chop the ham. In a bowl, mix the ham with the dill and parsley. Once the cheese is firm, remove it from the freezer and grate it into the ham mixture.
  2. Add the softened butter and mix. Take the butter out of the refrigerator at least 30 minutes beforehand. If you forget, cut it into cubes and microwave for 5 seconds.
  3. Add the pressed garlic and mix the filling thoroughly. Cut the ends off the peppers and carefully remove the seeds, keeping the peppers intact. Pack them with the filling and refrigerate.
  4. Let the butter firm up in the refrigerator so the filling holds its shape. After several hours, remove the peppers and use a sharp knife to cut them into rounds 0.5 cm thick.

Tip: Pack the filling into the peppers a little at a time using the handle of a wooden spoon to prevent gaps and keep the rounds from falling apart when sliced. Straight peppers work best.
