These ham and cheese quesadillas make a snack using 4 tortillas, 150 g shredded Edam, 8 slices of ham, and finely diced red bell pepper. Each tortilla is folded in half and toasted in a dry skillet for 2 minutes per side. The outside turns crisp, and the melted cheese holds the filling together so it doesn't fall apart.

Each tortilla makes 3 triangles, which can be wrapped in parchment paper once cool. They are softer when cold but hold their shape. Unlike ham and cheese tortilla roll-ups, these are toasted rather than rolled.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the filling

    8 min

Coarsely grate the cheese. Remove the stem and seeds from the bell pepper and cut it into very small dice; larger pieces could tear the tortilla.

  2. Fill the tortillas

    2 min

On one half of each tortilla, layer some cheese, 2 slices of ham, bell pepper, and the remaining cheese, then season with a little black pepper. Fold the other half over the filling and press gently.

  3. Toast in a skillet

    16 min

Heat a dry skillet over medium-high heat. Toast the tortillas one at a time without oil for 2 minutes per side, until golden and the cheese has melted. Each takes 4 minutes.

  4. Cut into triangles

    4 min

Cut each tortilla into 3 triangles. Serve warm, or let cool and wrap in parchment paper.

Tip: Over high heat, the tortilla will blacken before the cheese melts. For a packed snack, let it cool completely before wrapping so the steam doesn't soften it; it will keep in the refrigerator until the next day.
