Cheese-stuffed potato crescents with Parmesan are a simple dinner for four made with everyday ingredients, ready in about 25 minutes. Mash the boiled potatoes until smooth, then let them cool before mixing with all-purpose flour, salt, and grated Parmesan. Roll the dough into a circle, cut it into triangles like a pizza, and sprinkle a little hard cheese over the wide end of each triangle. Roll the triangles into crescents and fry them in oil for a soft center and a lightly crisp exterior.

Instructions

Tip: tap a step to mark it as done.

  1. Peel the potatoes and boil them in lightly salted water until tender. Drain, mash until smooth, and let cool to room temperature so they are easier to work with.

  2. Add the all-purpose flour, a little salt, and the grated Parmesan to the potatoes. Mix thoroughly to form a uniform dough. If it is too loose and difficult to work with, add a little more flour.

  3. On a floured surface, roll the dough into a circle and cut it into equal triangles, like a pizza. Sprinkle a little grated hard cheese along the wide edge of each triangle, then roll up the dough.

  4. Heat the oil in a skillet and fry the crescents until golden. Transfer to paper towels to absorb the excess oil.

Tip: Grate the hard cheese as finely as possible and sprinkle it only in the center of the wide end, away from the edges. Any cheese that leaks out could splatter and burn in the oil.
