Bucatini with mushroom sauce features thick, hollow spaghetti served with mushrooms simmered in wine and butter. Sauté garlic in olive oil, add sliced button mushrooms, then pour in dry white wine and let the alcohol evaporate. Butter gives the sauce a smooth finish, and grated Parmesan goes on top. It's a quick dinner for four; cook the pasta just until al dente.

Instructions

Tip: tap a step to mark it as done.

  1. Heat the olive oil in a preheated skillet and sauté the garlic until golden. Add the sliced mushrooms and sauté. Reduce the heat, pour in the wine and let the alcohol evaporate.
  2. Season with salt and black pepper and cook for about 5 more minutes. Stir in the butter, then remove the skillet from the heat once it has melted.
  3. Meanwhile, cook the bucatini until al dente.
  4. Toss the cooked pasta with the mushroom sauce. Serve topped with grated Parmesan and fresh herbs, if desired.

Tip: Sauté the mushrooms in a large skillet or in batches. Crowding them makes them release water and steam rather than turn golden.
