Braised vegetables with button mushrooms feature four main ingredients—onions, button mushrooms, carrots, and zucchini—seasoned with salt and Italian seasoning. Add the vegetables in stages according to how long they take to soften: onions and mushrooms first, then carrots, and zucchini at the end so it doesn't overcook.

Serve as a side dish with meat or with rice.

Instructions

Tip: tap a step to mark it as done.

  1. Onions and mushrooms

Cut the onions into wedges and sauté in the olive oil for about 5 minutes. Add the sliced button mushrooms and sauté for another 5 minutes.

  2. Carrots

Add the carrots, sliced into rounds, season with salt, and sprinkle with the Italian seasoning. Cover and braise for about 15 minutes, until the carrots are almost tender.

  3. Zucchini

Finally, add the zucchini, sliced into half-moons, and braise for another 5–10 minutes, leaving it slightly firm. Add more salt to taste.

Tip: Do not rinse the button mushrooms under running water; simply wipe them clean with a damp cloth. Otherwise, they will absorb water and steam instead of browning.
