This salted vegetable mix with tomatoes and carrots is a pantry staple for making soups and meat dishes in winter. Combine grated carrots, diced onions and bell peppers, blanched and peeled tomatoes, and finely chopped parsley, then add salt. After ten minutes, pack the mixture into jars, close them, and store in the pantry. It is especially useful for soups and perkelt, a Hungarian-style meat stew, when fresh vegetables are less plentiful. Preparation takes about 25 minutes.

Instructions

Tip: tap a step to mark it as done.

  1. Peel and grate the carrots, then dice the onions and bell peppers. Scald the tomatoes with hot water to loosen their skins, then peel and dice them. Finely chop the parsley.

  2. Combine all the vegetables in one container and add the salt. If the salt is very fine, 400 g will be enough. Let stand for 10 minutes, then pack the mixture into jars, close them, and store in the pantry.

  3. Use the mixture as a base for soups or perkelt, a Hungarian-style meat stew, especially during the colder months when fewer fresh vegetables are available.

  4. The vegetables are preserved with salt alone, so preparation is simple and the mixture keeps for a long time.

Tip: This mixture contains a lot of salt, so add it to soup by the spoonful and taste before adding any more salt. Always use a clean, dry spoon to scoop from the jar to help the vegetables keep longer.
