Vegetable soup with beef meatballs is a hearty lunch or dinner made with a rich beef broth simmered from scratch. Carrots, parsley root, onion, potatoes, tomato, green peas, and bell pepper go into the broth, followed by meatballs made with ground beef, rice, and egg. The meatballs are easiest to shape with wet hands. As the old Slovak saying goes, soup is the foundation of a meal—and this one is filling enough without a second course.

Instructions
Tip: tap a step to mark it as done.
Place the beef in cold water (about 2.5 l) and simmer over low heat for 1 hour, skimming off the foam. Clean and finely chop the vegetables, then add them to the soup along with the bay leaves. Cook for another 20 to 30 minutes, then remove the beef.
Cook the rice and let it cool. Add the salt, pepper, egg, and ground beef, then mix well and shape into meatballs with wet hands. Peel and dice the potatoes, then add them to the soup along with the finely chopped tomato and green peas.
Cut the bell pepper into thin strips and add it to the soup. Simmer over low heat for 10 minutes, then add the meatballs.
Cook everything together for 10 minutes, then remove the soup from the heat and serve.
Tip: Make the meatballs small, about the size of a walnut, so they cook through in 10 minutes. Add them when the soup is gently simmering, as a rolling boil could break them apart.
