Bean soup with potatoes and rice is a thick, homemade soup based on a grandmother's recipe that serves six. Soak the beans overnight, then cook them for about an hour until tender before adding potatoes, rice, and half the carrot and onion. Sauté the remaining vegetables until golden, then briefly cook them with a dusting of flour to thicken the soup. Finish with parsley leaves, and add sausage or meat if you prefer a heartier version.

Soak the beans overnight in water that has been boiled and cooled. Then rinse them and cook for about an hour, until tender.
Meanwhile, peel and cut the potatoes. Peel and finely dice the carrot and onion, and rinse the rice. Add the beans, potatoes, rice, and half the carrot and onion to boiling water and cook for about 20 minutes.
While the soup cooks, sauté the remaining carrot and onion in a skillet until golden.
Add the flour to the sautéed vegetables and stir for about another minute. Stir the mixture into the soup, season with salt and black pepper, and cook for about 7 minutes. Finish by adding finely chopped parsley leaves.
Tip: For a heartier soup, add sausage or meat.
Tip: The rice will continue to absorb liquid and thicken the soup, so thin any leftovers with a little water the next day and reheat gently.
