Sour potato soup with cream (zemiaková polievka na kyslo) is one of the traditional Slovak soups made from everyday ingredients. Flour is fried in lard together with ground paprika, then diced potatoes and carrots are added, and after pouring in water the soup simmers with bouillon and ground caraway until tender. Finally it is soured with vinegar and softened with cooking cream. Serve it with bread; the recipe makes four servings.

Instructions

Tip: tap a step to mark it as done.

  1. Peel the potatoes and cut them into cubes; clean the carrots and chop them.

  2. Fry the flour in the lard, add the paprika, potatoes and carrots, and fry everything together briefly.

  3. Add salt, pour in 1.5 l of water, and simmer. Add the bouillon and the caraway and cook for about 20 minutes, until tender.

  4. Sour the soup with vinegar to taste, stir in the cream and just let it heat through. Finally, season with salt.

Tip: Stir the paprika into the roux quickly and add the vegetables right away, because paprika turns bitter easily in hot lard. Add the vinegar a teaspoon at a time and keep tasting.
