Goulash soup is a thick soup of beef stewed with onion and sweet paprika, made more filling with potatoes. It originates in Hungarian cuisine, but in Slovakia it is one of the most popular soups and is cooked both at home and in a cauldron (kotlík).

The beef needs about an hour and a quarter to become tender, so plan on two hours for the soup.

Ingredients

Tick off what you already have at home.

Instructions

Tip: tap a step to mark it as done.

  1. Sauté the onions

    10 min

Finely chop the onions and slowly sauté them in the lard over medium-low heat until golden.

  2. Brown the beef

Cut the beef into cubes of about 1.5 cm, add them to the onions, and brown on all sides. Take the pot off the heat and stir in the ground paprika, caraway, and tomato paste. The paprika must not scorch, or the soup will turn bitter.

  3. Cook the beef

    1 hr 15 min

Pour in 2 liters of water, add salt, and simmer, covered, over low heat for about 75 minutes, until the beef is almost tender.

  4. Add the potatoes

    25 min

Peel the potatoes and cut them into cubes. Remove the seeds from the pepper and cut it into smaller pieces. Add both to the soup and cook for another 20–25 minutes, until the potatoes are tender and have partly thickened the soup.

  5. Season

Add the crushed garlic and marjoram, season with salt and pepper, and let the soup stand for 5 minutes. Serve hot, with bread.

Tip: Goulash soup tastes even better the next day. If it is thinner than you like, mash a few cooked potato cubes in the pot; the soup will thicken without any flour.
