Bean soup with smoked pork ribs and vegetables is a thick, home-style soup hearty enough for lunch. Onion is softened in lard with bell peppers and tomatoes, then smoked pork, bay leaves, caraway seeds, and black pepper are added, followed by stock and beans. Diced carrots, parsley root, and celery root go in toward the end, and the soup is thickened with a garlic roux—a cooked flour-and-fat mixture—with sweet paprika. You can also use a smoked pork hock instead of ribs.

Instructions

Tip: tap a step to mark it as done.

  1. Bean soup with smoked pork ribs and vegetables
  2. Soak the beans the day before. (Soaking the smoked pork is also recommended.)

Soften the onions in lard, add the bell peppers and tomatoes, and sauté briefly together. Add the smoked pork, bay leaves, and pepper, season cautiously with salt, and sauté the meat as well.

  3. Pour in the stock, add the beans, and simmer. Shortly before the end of cooking, add the diced root vegetables and cook until tender. Finally, thicken the soup with a roux made with garlic and sweet paprika.

Tip: Remove the tender ribs from the soup, strip the meat from the bones, cut it up, and return it to the pot so there are no small bones in the bowls. Discard the bay leaves at the same time.
