Cauliflower soup with carrot and cheddar is a creamy cheese soup you can have on the table in about 30 minutes. Cauliflower florets, grated carrot, and chopped celery are simmered in water with vegetable bouillon for 12 to 15 minutes until soft. In another pot, a light roux is made with butter, then milk is added and the sauce is cooked until it thickens. The two parts are combined, and grated cheddar makes the soup smoother. It is hearty, yet also suitable for summer.

- 10 min
Break the cauliflower into small florets, grate the carrot, and chop the celery into small pieces.
- 15 min
Put the cauliflower, carrot, and celery in a pot and cover with broth, or with water and the bouillon. Bring to a boil and simmer for 12–15 minutes, until the vegetables are soft.
- 5 min
In another pot, melt the butter over medium-low heat and stir in the flour, salt, and pepper. Gradually pour in the milk, bring to a boil, and cook for 2 minutes, stirring constantly, until the mixture thickens.
Reduce the heat and stir in the grated cheese. Remove the sauce from the heat, stir it into the cauliflower mixture, season with ground paprika or other spices if needed, and serve.
Tip: Soak the cauliflower florets in cold salted water for a few minutes; any dirt and tiny insects will float out. Then rinse them thoroughly.
