Baked potatoes stuffed with cheddar, onion and eggs make a dinner for two without leaving many dishes to wash. Bake the large potatoes in their skins first, then scoop out the flesh and combine it in a skillet with sautéed onion, garlic and grated cheddar. Spoon the mixture back into the potatoes, sprinkle with chives and crack an egg into a well in each one. Bake at 200 °C (400 °F) for another 10 to 15 minutes.

Preheat the oven to 200 °C (400 °F). Wash the potatoes, prick them lightly with a fork and bake for 30 to 40 minutes, until tender. Let cool.
Heat the olive oil in a skillet and sauté the onion and garlic. Add the scooped-out potato flesh, cheese, salt and pepper, and mix well. Place the hollowed-out potatoes on a baking sheet lined with parchment paper.
Fill the potatoes with the prepared mixture and use a spoon to make a well in the top of each for an egg. Sprinkle with chives and crack an egg into each potato.
Bake at 200 °C (400 °F) for 10 to 15 minutes, until the whites are completely set and the yolks are still soft.
Tip: Cut the potatoes in half lengthwise, leaving a thin layer of flesh inside the skins so the shells hold their shape. Crack each egg into a cup first, then pour it into the well without spilling.
