This traditional chicken soup with root vegetables is made with hen bones, onion, and garlic, with ingredients added by eye. Once the broth comes to a boil, skim off the foam and add chopped carrots, parsley root, celery root, and kohlrabi. Simmer gently, then add chopped parsley and celery leaves near the end of cooking. Cook the fine soup noodles separately. If you like spicy food, you can add hot paprika. Serves four.

Instructions

Tip: tap a step to mark it as done.

  1. Clean the bones and add enough water to cover them. Add the onion and garlic. Bring to a boil, skim off the foam, and add the chopped vegetables.

  2. Season the soup with salt and black pepper and continue to simmer over low heat. Near the end of cooking, add the finely chopped parsley and celery leaves. Meanwhile, cook the fine soup noodles separately.

  3. Tip: If you like spicy food, add some hot paprika to the soup.

Tip: Halve the onion with its skin on and brown the cut sides in a dry skillet until dark to give the broth a rich golden color.
