Beef and bean soup is a thick soup similar to bean goulash: the beef is simmered with onion and paprika, then cooked with soaked beans, potatoes, and bell pepper. Soak the beans a day ahead.

Instructions

Tip: tap a step to mark it as done.

  1. Soak the beans

Rinse the beans, cover with plenty of cold water, and let soak overnight.

  2. Prepare the beef

    15 min

Pat the beef dry and cut into cubes about 1.5 cm across. Sauté the finely chopped onions in the lard, then add the beef and brown it. Remove from the heat, stir in the paprika and caraway, and immediately add water.

  3. Simmer the soup

    1 hr 15 min

Add the drained beans and simmer for about 1 hour 15 minutes, until the beans and beef are almost tender. Do not add salt.

  4. Add the potatoes and pepper

    20 min

Add the diced potatoes and chopped bell pepper, season with the salt, and simmer for another 20 minutes. Stir in the crushed garlic and marjoram at the end.

Tip: Do not salt the soup until you add the potatoes—the beans soften more slowly in salted water and may stay hard.
