Frankfurter soup is a classic soup with frankfurters and potatoes that many Slovaks remember from preschool and school cafeterias. It starts with a roux of onion, all-purpose flour, and sweet paprika cooked in lard, then thinned with broth. The potatoes and sliced frankfurters cook directly in the soup, and a little milk softens the flavor at the end. It's inexpensive, filling, and ready in about 35 minutes. Serve with bread or rolls.

Instructions
Tip: tap a step to mark it as done.
Peel the potatoes and cut them into small cubes. Take the frankfurters out ahead of time so they aren't too cold. Heat the lard or oil in a pot and sauté the finely chopped onion. Add the all-purpose flour and cook to make a roux.
Stir well, add the sweet paprika, cook for a few more minutes, then pour in the broth.
Bring to a boil, stirring constantly. Cook for 25 minutes and season with salt and pepper to taste. Add the potatoes and cook until tender, then slice the frankfurters into rounds and add them to the boiling soup.
Cold frankfurters will lower the temperature of the soup, so bring it back to a boil, stir, and remove from the heat to keep the frankfurters from overcooking.
Taste the soup and adjust the salt and pepper as needed. Stir in a little milk to soften the flavor. Serve with bread or rolls, and add a little cream to individual bowls if desired.
Tip: If making the soup ahead, add the frankfurters when reheating, as they will swell and soften if left sitting in the soup.
