This no-cook tomato and garlic sauce needs only tomatoes, garlic, and salt. Grind or blend the ingredients, add salt, and pour into clean jars or containers. Use the sauce on toast, in pasta, on pizza, in goulash, or as a base for cooking meat, adding both flavor and salt to the dish. Since it is neither cooked nor heat-processed for canning, keep it refrigerated and use within a week, or freeze for longer storage.

Instructions

Tip: tap a step to mark it as done.

  1. Grind or blend the tomatoes and garlic, add the salt, and pour the mixture into clean jars or containers. Seal tightly and refrigerate.

  2. Mix the sauce with tomato paste to use on toast, pasta, or pizza, or add it on its own to goulash or as a base for cooking meat. Use it to season dishes and add salt.

Do not cook or heat-process the sauce for canning. Store it only in the refrigerator and use within a week. For longer storage, divide it among smaller containers and freeze.

  3. If the thick part of the sauce separates in the jar, simply stir it before using.

Tip: To make peeling 300 g of garlic easier, soak the cloves in warm water for a few minutes first. Always use a clean spoon to scoop out the sauce so no food scraps get into the jar.
