Quick homemade bread with fresh yeast is a recipe for everyone who has so far been put off baking bread by lengthy preparation. The yeast is dissolved in water with a little sugar, the rest of the water is added, followed gradually by all-purpose flour mixed with salt, and the dough is simply stirred with a spoon. It needs only 15 minutes to rise, then it is shaped into a loaf and baked for 30 minutes at 220 °C (425 °F). You need just five ingredients, which you usually have at home.

Instructions

Tip: tap a step to mark it as done.

  1. Dissolve the yeast in a little water with the sugar. When a starter forms, pour in the remaining water and add the flour mixed with the salt a little at a time.

Work the mixture with a spoon into a smooth, uniform dough.

  2. Cover the dough with a kitchen towel and let it rise for 15 minutes. Meanwhile, preheat the oven.

Shape the dough into a loaf, transfer it to a baking sheet lined with parchment paper and bake at 220 °C (425 °F) for 30 minutes.

Tip: Shape the soft dough with floured hands on a well-floured surface so it does not stick. The bread is done when it sounds hollow when you tap the bottom crust.
