Girelli are Italian puff pastry rolls, known in Slovakia as ham and cheese pinwheels. This version also includes finely grated raw potatoes in the filling; salt them and dry them thoroughly to keep the pastry from getting soggy. Chill the rolled pastry in the refrigerator for 30 minutes, slice into rounds, and bake for 15–20 minutes at 170°C (340°F). Serve them alongside bite-size appetizers and chips at a party, or pair them with white wine.

Instructions
Tip: tap a step to mark it as done.
Finely grate the potatoes, salt lightly, and dry thoroughly. Roll out the softened puff pastry, preferably into a circle. Spread the grated potatoes over the pastry, add the ham, and spread with the soft cheese.
Roll up the pastry, wrap in plastic wrap, and chill in the refrigerator for 30 minutes. Slice into rounds, arrange on a baking sheet lined with parchment paper, and place in the preheated oven.
Bake at 170°C (340°F) for about 15–20 minutes.
Tip: Slice the rounds with a very sharp knife without pressing down, since compressed puff pastry edges will not rise in the oven. Space them apart on the baking sheet, as they spread during baking.
