These crisp puff pastry pinwheels are filled with finely grated raw potatoes, ham, and soft cheese. Salt the potatoes and squeeze out the water, then spread them over the rolled-out pastry along with the ham and soft cheese. Chill the roll in the freezer for half an hour to make it easier to slice into rounds. Bake for 15–20 minutes at 170°C (340°F) for a savory snack to serve at parties or with wine.

Instructions
Tip: tap a step to mark it as done.
Finely grate the potatoes and lightly salt them in a bowl. Once they release their water, squeeze it out.
Roll the puff pastry into a circle and spread the grated potatoes over it. Add the ham and soft cheese, spreading or mashing the cheese over the filling.
Roll up the pastry, wrap it in plastic wrap, and chill in the freezer for 30 minutes. Then slice it into rounds.
Arrange the rounds on a baking sheet lined with parchment paper and bake in an oven preheated to 170°C (340°F) for about 15–20 minutes. Serve with white wine.
Tip: Spread the raw potatoes over the pastry in a very thin layer so they can cook through during the short baking time. Leave a strip of pastry without filling along the edge where you will finish rolling to help seal the roll.
