These puff pastry pinwheels pair spicy Spanish chorizo with lightly sweet cinnamon applesauce. The apples are simmered with cane sugar, cinnamon, and water, then blended into a puree and spread over the rolled-out pastry. Chopped chorizo is scattered on top before the pastry is rolled up and cut into 2 cm slices. After baking for 20 minutes at 200 °C (400 °F), serve them with sour cream, the remaining applesauce, fresh cress, and flaky sea salt.

Instructions

Tip: tap a step to mark it as done.

  1. For the applesauce, wash, peel, core, and chop the apples. Place them in a saucepan with the sugar, cinnamon, and water and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for about 20 minutes, until completely soft. Blend into a puree and set aside.

  2. Preheat the oven to 200 °C (400 °F) and line baking sheets with parchment paper.

  3. Roll out the thawed puff pastry on a floured work surface to a thickness of 0.5 cm and spread with a thin layer of applesauce. Remove the casing from the chorizo, chop it into small pieces, and scatter over the pastry.

Roll up the pastry into a log, cut into 2 cm-thick slices, and arrange on the baking sheets. Bake for 20 minutes until golden, then let cool on the baking sheets for 10 minutes.

  4. Serve the pinwheels with sour cream and applesauce, sprinkled with fresh cress and sea salt.

Tip: Let the applesauce cool completely before spreading it on the pastry, as warm sauce would melt the fat between the layers. Slice the roll with a sharp, thin-bladed knife without pressing down so the pinwheels stay round.
