These apple-filled puff pastry turnovers are a homemade version of store-bought pastries. Diced apples are briefly cooked with butter, sugar, and cinnamon, then spooned onto rectangles of puff pastry. Slits are cut into the other half of each rectangle before it is folded over the filling. Simply crimp the edges with a fork, brush with egg, and bake at 180 °C (350 °F) until golden. Serve with coffee or enjoy as a snack.

Instructions

Tip: tap a step to mark it as done.

  1. Dice the apples and cook them gently in a skillet with the butter, cinnamon, and sugar.

  2. Cut the pastry into rectangles. Spoon the filling onto one half of each rectangle and cut slits into the other half, working from the center toward the edge. Fold the slit half over the filling and crimp the edges with a fork.

  3. Brush the turnovers with egg and bake at 180 °C (350 °F) until golden.

Tip: Keep the puff pastry cold as you work; if it softens, refrigerate the rectangles for ten minutes. Otherwise, the dough will stretch when folded and will not puff up as much in the oven.
