Ham and egg chlebíčky, Slovak open-faced sandwiches, are a cold appetizer for New Year's Eve, made with slices of veka, a white loaf, and a cheese spread. Each sandwich is topped with a roll of ham, slices of hard-boiled egg, a slice of pickle, a strip of red bell pepper, and a parsley leaf.

One loaf makes about 20 sandwiches. Instead of the spread, you can also use vlašský šalát, a creamy deli salad with salami, or a salami and egg spread. Bite-sized canapés also go well with these sandwiches.

Instructions

Tip: tap a step to mark it as done.

  1. Hard-boil the eggs

Hard-boil the eggs for 10 minutes from the time the water begins to boil. Transfer them to cold water, peel, and cut into rounds.

  2. Make the spread

Mix the softened butter with the cream cheese and mustard until smooth. Season with salt to taste.

  3. Slice the bread

Cut the loaf diagonally into slices about 1.5 cm thick to make larger sandwiches.

  4. Prepare the vegetables

Cut the pickles lengthwise into thin slices and the bell pepper into strips. Pick the parsley leaves from the stems.

  5. Assemble the sandwiches

Spread a generous layer of the cheese spread over each bread slice, all the way to the edges. Top with a rolled slice of ham, egg rounds, a pickle slice, and a strip of bell pepper. Garnish with a parsley leaf.

  6. Serve

Arrange the sandwiches close together on a tray and cover with plastic wrap. Refrigerate until serving. They are best the day they are made.

Tip: Day-old bread is easiest to slice. Fresh bread compresses under the knife, causing the slices to tear.
