Spicy sausage skewers are a colorful bite-sized appetizer: a thin slice of dry sausage folded like a little sail, a pickle round, half a cherry tomato, and a cube of hard cheese. The cheese cube forms a sturdy base, so each skewer stands upright on the plate and holds every bite together. A parsley leaf goes on top, with a bowl of mustard on the side for dipping. No baking is needed, and 24 bites are ready in 25 minutes—just right for New Year's Eve, a party, or serving with beer or wine.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the cheese and vegetables

    10 min

Cut the cheese into cubes about 1.5 cm on each side. Cut the cherry tomatoes in half. Slice the pickles into rounds about 1 cm thick and pat dry with a paper towel.

  2. Slice the sausage

    5 min

Remove the casing from the chilled sausage, if present, and cut into thin slices about 2–3 mm thick. Fold each slice in half like a little sail.

  3. Assemble the skewers

    10 min

Thread a parsley leaf, a folded sausage slice, a pickle round, and a tomato half cut side down onto a short skewer. Finish with a cheese cube, pushing the skewer only halfway into it. Stand the skewers cheese side down on a plate or board; the cubes will keep them upright.

  4. Serve

Put the mustard in a small bowl and serve alongside the skewers for dipping. Serve the skewers immediately or keep covered in the refrigerator until the evening; the tomatoes will release juice if left longer.

Tip: Slice the sausage straight from the refrigerator while it is cold so the thin slices stay intact and fold without tearing.
