Instructions
Tip: tap a step to mark it as done.
Cut out the pastry cups
10 minPreheat the oven to 200 °C (400 °F) and grease a mini muffin pan with butter. Using a glass, cut 24 circles about 6 cm in diameter from the puff pastry. Press them into the muffin cups and prick the bottoms with a fork.
Bake
12 minBake for 10–12 minutes, until golden brown. If the bottoms puff up, press them down with a teaspoon immediately after removing the pan from the oven. Let the pastry cups cool in the pan.
Hard-boil the eggs
12 minLower the eggs into boiling water and cook for 10 minutes, until hard-boiled. Cool them in cold water and peel.
Prepare the filling
5 minFinely chop the eggs and mix with the mayonnaise, mustard, and chives. Season with salt and pepper.
Fill the cups
5 minFill the cooled pastry cups with the egg salad just before serving and sprinkle with chives.
Tip: The unfilled cups will stay crisp in an airtight container until the next day, but filled cups will start to soften after just a few hours.
