Žabky, meaning “little frogs,” are small sesame-topped yeast rolls that are slit after baking, filled with butter mixed with processed cheese and garlic, and given a slice of smoked sausage in their “mouths.” On the table, they look like little frogs with wide mouths.

The recipe makes about 35 rolls, perfect for a party or to serve with beer.

Instructions

Tip: tap a step to mark it as done.

  1. Knead the dough

Pour the lukewarm milk into the flour, then add the crumbled yeast, softened butter, sugar, and a pinch of salt. Knead into a dough and let rise for about 30 minutes.

  2. Shape the rolls

Roll out the dough on a floured work surface, cut out small circles, and shape them into small rolls. Arrange on a greased baking sheet and let rise for about 10 more minutes.

  3. Bake

Brush the rolls with beaten egg and sprinkle with sesame seeds. Bake in a preheated oven at 180 °C (350 °F), or 160 °C (325 °F) in a fan oven (convection), or gas mark 3, for about 8–12 minutes.

  4. Fill the frog rolls

Mix the butter with the processed cheese and crushed garlic. Once the rolls have cooled, cut a slit two-thirds of the way through each one. Add the filling and insert a slice of smoked sausage so the rolls look like frogs with open mouths. Garnish with parsley.

Tip: Spoon the filling into a plastic bag, snip off a corner, and pipe it into the slit rolls. When filling 35 rolls, this is quicker and neater than using a teaspoon.
