These party rolls are small puff pastry pockets filled with ground meat or raw sausage meat mixed with breadcrumbs, onion, parsley, and milk. The pastry is folded over the filling, marked with a fork in a crosshatch pattern, and brushed with egg. The rolls are baked briefly at 220 °C (425 °F), then at 200 °C (400 °F), and served with ketchup or barbecue sauce.

  1. Filling

Preheat the oven to 220 °C (425 °F). Combine the ground meat with the breadcrumbs, finely chopped onion, parsley, and milk. Season with salt and pepper and mix thoroughly.

  2. Pastry

Roll out the puff pastry into a thin sheet and cut into rectangles. For a party, make smaller rectangles, about 8 × 10 cm. Place a strip of filling on each rectangle, leaving the edges clear. Fold the pastry in half over the filling and press the edges firmly together so the rolls do not open during baking.

  3. Crosshatch and egg wash

Press a crosshatch pattern into the tops of the rolls with a fork. Beat the egg with 2 tbsp milk and brush over the rolls. Transfer them to a baking sheet lined with parchment paper.

  4. Bake

Bake for 5 minutes at 220 °C (425 °F), then reduce the temperature to 200 °C (400 °F) and bake for about 20 more minutes, until golden. Serve warm or cooled with ketchup or barbecue sauce.

Tip: Leave about 1 cm of pastry clear around the edges; otherwise, the rolls will open during baking. When cut open, a roll should be gray inside with no pink remaining, indicating that the meat is cooked through.
