Fig puff pastry rolls with nuts and honey are small pastries with Middle Eastern flavors, perfect with a cup of tea or coffee. Chopped figs soak for half an hour in warm honey and orange juice, then are mixed with almonds, hazelnuts, cinnamon, and citrus zest. The filling is spread onto triangles of pastry brushed with margarine, which are rolled up, sprinkled with a few caraway seeds, and baked at 180°C (350°F). The recipe makes 56 crisp rolls.

Instructions

For the filling, wash the oranges in hot water, dry them, and finely grate about 1/2 tsp of zest. Juice the oranges and gently warm the juice with the honey. Let the finely chopped figs soak in the orange honey for 30 minutes. Add the remaining filling ingredients, mix thoroughly with your hands, and divide the mixture into 56 portions.
Preheat the oven to 180°C (350°F) and line baking sheets with parchment paper.
Cut the pastry sheets in half, then cut each half into 4 triangles. Brush with half of the melted margarine. Place a portion of filling at the wide end of each triangle and spread it out, leaving a small border. Fold the sides of the pastry slightly inward, then roll up.
Arrange the rolls on the baking sheets, brush with the remaining margarine, and sprinkle with a few caraway seeds. Bake for 15 to 20 minutes, until golden brown, turning the rolls over halfway through baking. Dust with powdered sugar while still warm.
Tip: Toast the almonds and hazelnuts in a dry skillet before adding them to the filling to bring out their aroma. Keep the pastry sheets you are not working with in the refrigerator, as they tear when warm.
