This omelet with sour pickles and smoked sausage is an unusual combination that puts pickles from canning season to use. Whisk the eggs with milk and salt, add finely chopped pickles, smoked sausage, and parsley, and pour the mixture into a skillet with hot oil. Cook covered over low heat until set, then flip, brown the other side, and serve hot. Ready in about half an hour, it works for breakfast or dinner.

Instructions

Tip: tap a step to mark it as done.

  1. Whisk the milk with the eggs and salt. Finely chop the pickles and sausage and stir them into the eggs.

  2. Add the chopped parsley, season the eggs with pepper, and pour into a skillet with hot oil. Cover and cook over low heat for about 10–15 minutes, until the omelet is firm in the center and the surface is no longer glossy.

  3. Slide the omelet onto a plate, cover it with the skillet, and invert it back into the skillet. Brown briefly on the other side and serve hot.

Tip: Pat the chopped pickles dry with a paper towel before adding them so the omelet does not turn watery. Both the pickles and sausage are salty, so salt the eggs lightly.
