Bean salad with mushrooms and pickles is a vegetarian salad that combines canned beans with sautéed mushrooms. Thinly sliced onions and button mushrooms are sautéed until golden, then mixed with drained beans and sliced sour pickles. Simply season with salt, pepper, and parsley or chives. Serve the salad as a side dish or on its own, or use it as a filling for a toasted roll with meat.

Instructions
Tip: tap a step to mark it as done.
Peel the onions and clean the mushrooms. Slice both thinly and sauté in a skillet until golden.
Thinly slice the pickles as well.
Drain the beans and mix with the onions, mushrooms, and pickles. Season with salt and pepper to taste.
Let the salad sit briefly to allow the flavors to meld.
Tip: Sauté the mushrooms in hot oil in small batches; otherwise, they will release their liquid and simmer in it. Rinse the drained beans with water to remove the thick canning liquid.
