Grandma-style potato salad with pickles is a popular side dish for Christmas carp as well as for schnitzels and other fried meat. It differs from common versions in that the potatoes are peeled and diced before cooking. After draining, they are doused with pickle brine mixed with mustard and left to soak in it in the refrigerator for half an hour. The dressing is made of mayonnaise mellowed with yogurt, pickles, red onion and celery stalks.

Instructions

Tip: tap a step to mark it as done.

  1. Peel the potatoes, rinse them and cut into small cubes. Put them in a pot of cold water, add salt and boil for 10–12 minutes, until tender. Drain and set aside; meanwhile prepare the other ingredients.

  2. In a small bowl, mix the pickle brine with the mustard, pour it over the potatoes and refrigerate for 30 minutes.

Finely chop the pickles, onion and celery, put them in a bowl and add the mayonnaise, yogurt, salt and pepper.

  3. Finally, fold in the chilled potatoes, mix the salad thoroughly and serve.

Tip: Run a vegetable peeler over the celery stalk before chopping to remove the tough fibers, which would be noticeable in a delicate salad like this.
