Shopska salad is a Bulgarian classic made with tomatoes, cucumber, peppers, and onion, topped with a layer of grated Balkan cheese, a white brined cheese. The dressing is simply oil, vinegar, and a pinch of salt, with the cheese adding saltiness. Serve it as a light dinner or a side dish with meat. It is similar to Greek salad with feta and olives, in which the cheese is cubed.

Instructions
Tip: tap a step to mark it as done.
Chop the vegetables
10 minCut the tomatoes, cucumber, and peppers into cubes about 1.5 cm across, and thinly slice the onion into half-moons. Place everything in a bowl.
Add the dressing
2 minMix the oil with the vinegar and a pinch of salt. Pour over the vegetables and toss gently. Use only a little salt, as Balkan cheese is salty.
Top with cheese
3 minDivide the salad among bowls, coarsely grate the Balkan cheese over the top, and sprinkle with parsley. Serve immediately.
Tip: Grate the cheese just before serving and leave it on top rather than mixing it into the vegetables. Do not salt the salad ahead of time, or the vegetables will release too much liquid.
