Čevapčiči are small, skinless ground meat sausages from Balkan cuisine, seasoned with garlic, onion, and sweet paprika. The meat mixture rests in the refrigerator for an hour before shaping, and a little baking soda lightens the texture, keeping the čevapčiči juicy. Cook them in a skillet or on a grill and serve with finely chopped onion.
