Instructions

Tip: tap a step to mark it as done.

  1. Make the mixture

    15 min

Combine the beef with the grated onion, pressed garlic, parsley, cumin, paprika, and salt, and knead thoroughly. With damp hands, shape into 12 oblong kofta.

  2. Pan-fry the kofta

    10 min

Heat the oil in a skillet. Add the kofta and cook for 8–10 minutes, turning to brown all sides, until cooked through.

  3. Prepare the couscous

    5 min

Pour the hot broth over the couscous, cover, and let stand for 5 minutes to absorb the liquid. Fluff with a fork.

  4. Make the sauce and serve

Mix the yogurt with the pressed garlic and salt. Serve the kofta over the couscous with the yogurt sauce.

Tip: Knead the meat mixture thoroughly so the proteins bind together and the kofta hold their shape during frying, even without an egg or bread roll.
