Couscous with roasted vegetables and chickpeas is a vegetarian dish that lets the oven do most of the work. Hokkaido squash, zucchini, bell pepper, red onion, and chickpeas roast on a baking sheet until browned around the edges, while the couscous simply needs a soak in hot broth. A yogurt dressing with garlic, lemon, and mint brings everything together.

It tastes good warm or cold, making it a good option for a packed lunch.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the vegetables

Preheat the oven to 200 °C (400 °F). Wash the Hokkaido squash, remove the seeds, and cut it into roughly 2 cm cubes, leaving the skin on. Cut the zucchini, bell pepper, and onion into similarly sized pieces. Drain, rinse, and pat dry the chickpeas.

  2. Roast

On a baking sheet, toss the vegetables and chickpeas with 3 tbsp oil, the paprika, thyme, salt, and pepper, then spread in a single layer. Roast for 25–30 minutes, stirring halfway through, until the squash is tender and the vegetables are browned around the edges.

  3. Soak the couscous

Pour the hot broth over the couscous and add 1 tbsp oil. Cover and let stand for 5 minutes to absorb the liquid. Fluff with a fork.

  4. Make the dressing

Stir together the yogurt, pressed garlic, lemon juice, mint, and salt.

  5. Serve

Toss the couscous with the roasted vegetables and chickpeas, and serve with the yogurt dressing.

Tip: Chop the mint just before stirring it into the yogurt, as it darkens quickly when exposed to air. You can make the dressing several hours ahead and refrigerate it.
