Oven-baked chickpea patties are a simpler homemade version of falafel: blend canned chickpeas with onion, garlic, parsley, and cumin, then bake the patties instead of frying them. Serve them with garlic yogurt sauce, in pita bread or with a salad.

Blend the chickpeas
10 minPreheat the oven to 200 °C (400 °F). Drain, rinse, and thoroughly dry the chickpeas. Pulse them with the onion, garlic, parsley, and spices until you have a coarse mixture that holds together, not a smooth puree.
Shape the patties
10 minStir in the breadcrumbs and salt. With damp hands, shape the mixture into 16 small patties. Place them on a baking sheet lined with parchment paper and brush with the oil.
Bake
25 minBake for 20–25 minutes at 200 °C (400 °F), turning halfway through, until golden and crisp on the outside.
Make the sauce and serve
Mix the yogurt with the pressed garlic and salt. Serve the patties warm with the sauce, in pita bread or with a vegetable salad.
Tip: After draining the chickpeas, dry them thoroughly with a towel; a dry mixture is easier to shape and keeps the patties from cracking in the oven.
