Instructions

Tip: tap a step to mark it as done.

  1. Roast the sweet potatoes

    45 min

Preheat the oven to 200 °C (400 °F). Wash the sweet potatoes and halve them lengthwise. Brush the cut sides with 1 tbsp of the oil and season with salt. Place cut side down on a parchment-lined baking sheet and roast for 40–45 minutes, until tender.

  2. Roast the chickpeas

    15 min

Drain and dry the chickpeas, then toss with the remaining oil, paprika, cumin, and salt. Roast on the baking sheet alongside the sweet potatoes for the last 15 minutes.

  3. Make the yogurt sauce

Mix the yogurt with the pressed garlic, lemon juice, and salt.

  4. Fill the sweet potatoes

Lightly mash the sweet potato flesh with a fork. Top with the chickpeas, drizzle with the yogurt sauce, and sprinkle with parsley.

Tip: Roast the sweet potatoes cut side down so the flesh caramelizes against the baking sheet while staying moist inside.
