Sweet potato fritters are made much like potato pancakes: mix grated sweet potatoes with eggs, flour, and garlic, then pan-fry until golden. They are sweeter than potato pancakes and are served with a chive yogurt dip.

Instructions

Tip: tap a step to mark it as done.

  1. Make the batter

    10 min

Peel and coarsely grate the sweet potatoes, then squeeze out a little water with your hands. Mix with the eggs, flour, crushed garlic, salt, and paprika.

  2. Pan-fry

    25 min

Heat the oil in a skillet. Spoon the mixture into the hot oil to form fritters about 1 cm thick, pressing them down lightly. Cook over medium heat for 3–4 minutes per side, until golden and tender inside.

  3. Make the dip

Mix the yogurt with the chives and salt.

  4. Serve

Drain the fritters on a paper towel and serve warm with the dip.

Tip: Cook the sweet potato fritters over medium heat: sweet potatoes contain more sugar than regular potatoes, so high heat would blacken the outside before the inside cooks through.
