Baked cod with sweet potato mash is a simple fall dinner: bake the fillets with lemon and serve them with sweet potato mash and nutty brown butter. The white fish and orange mash complement each other in flavor, too.

Cook the sweet potatoes
20 minPeel and cube the sweet potatoes, then boil in salted water for 15–20 minutes, until tender. Drain and mash with the butter and warm milk until smooth. Season with salt.
Bake the cod
15 minPreheat the oven to 200 °C (400 °F). Pat the fillets dry, season with salt, brush with oil, and drizzle with lemon juice. Bake for 12–15 minutes, until the fish is opaque white and begins to flake.
Make the brown butter
3 minMelt the butter in a small skillet and let it foam until it turns brown and smells nutty. Add the sage leaves and remove from the heat.
Serve
Spoon the mash onto plates, place the cod on top, and drizzle with the sage brown butter.
Tip: Keep a close eye on the brown butter—it can go from golden brown to burned in seconds. Remove it from the heat as soon as it smells nutty.
