Sheet pan salmon with sweet potatoes and broccoli is a dinner that cooks together, leaving just one pan to wash. The sweet potatoes go into the oven first, followed by the broccoli and salmon when the potatoes are almost tender, so the fish stays juicy.

Lemon zest and garlic add flavor without a sauce. Each serving includes fish, sweet potatoes, and vegetables and provides plenty of protein; see the Nutrition Facts section for nutrient information.

Instructions

  1. Roast the sweet potatoes

Preheat the oven to 200 °C (400 °F). Peel the sweet potatoes and cut them into roughly 2 cm cubes. On a parchment-lined sheet pan, toss them with half the oil, the paprika, and a pinch of salt. Roast for 15 minutes.

  2. Prepare the salmon and broccoli

Cut the broccoli into small florets. Pat the salmon dry with a paper towel, season with salt and pepper, and rub with a mixture of the lemon zest, crushed garlic, and remaining oil.

  3. Finish roasting together

Stir the sweet potatoes on the sheet pan and push them toward the edges. Place the salmon in the center, skin-side down, and arrange the broccoli around it. Roast for 12–15 minutes, until the salmon flakes easily at its thickest point and reaches an internal temperature of 63 °C (145 °F).

  4. Serve

Drizzle the salmon and vegetables with the lemon juice and serve immediately.

Tip: Cut the broccoli florets to roughly the same size so they finish cooking together. If the fillets are thicker than 3 cm, leave them in the oven for three to five minutes longer.
